Pumpkin Snickerdoodles – melt in your mouth pumpkin cookies rolled in a combination of sugar and pumpkin pie spice. This is the perfect pumpkin cookie recipe!

Pumpkin Snickerdoodles

Snickerdoodle cookies are a family favorite, and these Pumpkin Snickerdoodles arethe perfect way to kick-off the season of all things pumpkin spice. These cookies got rave reviews from both my husband and my kids. My husband said they were just the perfect amount of pumpkin and my kids LOVED the way they smelled baking! Tender and soft, Pumpkin Snickerdoodles are rolled in a combination of pumpkin pie spice and sugar for the perfect crispy and chewy outside. If you like snickerdoodles and all things pumpkin spice, you are going to love these cookies!

How to Make Pumpkin Snickerdoodles

  1. This recipe is slightly different than making traditional cookies in that you are not going to combine the sugar and butter for the first step.
  2. Mix the softened butter, then combine with sugar, pumpkin, vanilla extract, baking powder, pumpkin pie spice and salt.
  3. Stir in the egg, followed by the flour. Then it’s time to chill.
  4. The dough will be very soft, so it will need to chill for at least two hours.
  5. Once the dough has firmed up, it’s time to scoop.
  6. Gently roll the dough into a ball and coat in cinnamon sugar mixture.
  7. Place on a baking sheet lined with a Silpat silicone liner or parchment paper and bake at 350 degrees for about 10 minutes. If you are using dark colored baking sheets, you may need to shorten the baking time.

Cookie Scoop

I finally purchased a cookie scoop and I don’t know what took me so long. It is awesome and scoops the dough perfectly! This little scoop is making my baking life so mucheasier!Just look at that perfectlittle cookie dough scoop! I’m obsessed!

    Hi there,

Do you think we can let the dough chill for a day? If a made the batter one night, then baked them the day after, do you think that would be okay? Thanks!

I love the pumpkin snickerdoodles! But I was wondering if you think it would work to add some cream of tartar. I missed the traditional snickerdoodle taste that provides.

If you’d doubled the recipe, and made sure the dough was chilled for long enough, I think the dough could’ve been saved. What did you end up doing?

FAQs

Why are my snickerdoodles always flat? ›

The Problem: Your Oven Is Too Hot

If your cookies repeatedly turn out flat, no matter the recipe, chances are your oven is too hot.

Why do my snickerdoodles come out hard? ›

Snickerdoodles might turn out hard if they are overbaked or if the dough is too dry. Be sure to keep an eye on them as they bake – when the edges are set but the centers are still soft and puffy, they are done. Also, make sure you're not adding too much flour.

Why don t my snickerdoodles crack? ›

If yours aren't cracking, your oven may not be hot enough or your ingredients may not be fresh enough! Are snickerdoodles supposed to be undercooked? I always recommend slightly underbaking your cookies and then letting them finish baking through cooling on the pan.

What can I substitute for cream of tartar in snickerdoodles? ›

You can either replace cream of tartar with baking powder at a 1:1.5 ratio (1 teaspoon cream of tartar : 1 ½ teaspoons baking powder), or you can replace cream of tartar with the combination of baking soda and either lemon juice or vinegar (as with this recipe).

What happens if I add cream of tartar to my cookies? ›

What Does Cream of Tartar Do in Cookies? Cream of tartar makes cookies chewy, as it precludes the sugar in the dough from crystalizing, which would lead to crispiness (ie: the opposite of chewiness).

Why does snickerdoodle dough need to be refrigerated? ›

1) Chilling cookie dough controls spread.

Chilling cookie dough before baking solidifies the fat in the cookies. As the cookies bake, the fat in the chilled cookie dough takes longer to melt than room-temperature fat. And the longer the fat remains solid, the less cookies spread.

How do you know when a snickerdoodle is done? ›

How do you know when the cookies are baked? The snickerdoodle cookies will only take about 10 to 12 minutes to bake, so be sure to keep your eye on them! It's best to rotate the cookies after about 6 minutes so that the cook evenly. The cookies are done when the edges are just set and the centres are soft and cracked.

Why aren't my snickerdoodles puffy? ›

How do you make snickerdoodles puffy and soft? The secret's in the ratio of butter to leavener to flour to egg. Don't use shortening here; you'll miss the flavor of butter. Slightly under-baking the snickerdoodles also guarantees a softer cookie.

What is the secret ingredient to keep cookies soft? ›

Cornstarch Is The Secret To Soft And Chewy Cookies.

Why do my snickerdoodles taste like flour? ›

Improper flour measurement is the #1 cause of your cookie dough being too dry or the cookies tasting like flour.

Why do my cookies go flat after I take them out of the oven? ›

If your cookies come out of the oven looking flat, you may not have adequately chilled the dough before baking. Chilling times may vary depending on the cookie you're making, but you should typically chill cookie dough in the refrigerator for at least two hours before you pop it in the oven.

Why do snickerdoodles call for cream of tartar? ›

Mom would tell you the cream of tartar stabilizes the snickerdoodles, providing the light, soft, pillowy texture. It also adds the tangy note associated with snickerdoodles.

Are snickerdoodles supposed to be soft when they come out of the oven? ›

They puff in the oven and then settle back down while cooling into a soft, thick, supremely chewy cookie with a gorgeous crinkly top. They've received nothing but rave reviews! Snickerdoodle is sort of a strange name, yes?

Why do my snickerdoodles sink in the middle? ›

Cakes sink in the middle due to several factors, including overmixing of the batter, opening the oven door too soon, or not baking at the right temperature. Expired leavening agents or incorrect proportions of ingredients can also cause sinking.

What will happen if we don t use cream of tartar in the play dough? ›

While cream of tartar is not an ingredient you probably keep on hand in your kitchen, it is worth the investment if you are trying to become a playdough making pro. Cream of tartar really helps to get your playdough to the fun gel form and prevent it from staying too wet.

Can I skip cream of tartar in a recipe? ›

In some recipes, you can leave out cream of tartar if there is no suitable replacement. You can simply omit cream of tartar from the recipe if you're making whipped egg whites, syrups, frostings, or icings.

What does cream of tartar do to taste? ›

In baked goods, cream of tartar is used as a leavener, to give cakes, muffins and cookies their rise. It has a tinny, metallic taste that's most noticeable in Snickerdoodle cookies. A tiny pinch added to water also helps vegetables maintain their color when they're blanched.

Why is snickerdoodle dough so sticky? ›

Too Much Liquid

If there is too much liquid in the dough for the flour to absorb, the result will be a soft and sticky dough. Fluids refer to water or milk used in the recipe, as well as liquid sweeteners, flavorings and eggs or egg substitutes.
