And the best part is, it’s healthy. You can also cook in your other favorite vegetables like carrots, peas, broccoli, or water chestnuts.

It is also full of vegetables, but your kids will love the flavor so much, they won’t even care.
This is one of the only ways I can get my husband to eat vegetables, and he loads up on this dish. But I can’t blame him, it’s so good, and so easy to make.

This recipe is so versatile that you could really add any of your favorite veggies. It’s also a great way to introduce new vegetables to your kids.

- water chestnuts
- red onion
- green beans
You could really throw in any vegetable you love, and it would taste amazing. You could also take out any that you don’t love.

steps to make the perfect Mushroom asparagus stir fry
- Slice your asparagus into small pieces. Mine were 1 to 2 inches long, but you could even cut them shorter.
- To save myself time, I usually purchase sliced mushrooms. I also prefer the taste of fresh mushrooms over canned mushrooms.
- I like to sauce my mushrooms and asparagus with just a little bit of olive oil, to soften them up.
- You can combine all the ingredients in the pan, but I was serving guests and poured it all into a big bowl, for better presentation.
- It is the perfect light dish, that is still extremely filling. You will love this one.

Mushroom Asparagus Chicken Stir Fry Recipe
This Mushroom Asparagus Chicken Stir Fry comes together in a matter of minutes and is so easy to make.
Prep Time 10 minutes mins
Cook Time 15 minutes mins
Total Time 25 minutes mins
Ingredients
- 2 bundles asparagus
- ¾ cup sliced mushrooms
- 2 Tablespoons olive oil divided
- 3 boneless, skinless chicken breasts
- ½ cup chicken broth
- 2 Tablespoons lemon juice
- 1 teaspoon lemon pepper seasoning
- dash of pepper (we used fresh cracked)
Instructions
Heat stove to medium-high heat.
Cut asparagus into 2" pieces and place in a pan or skillet.
Chop mushrooms and place in skillet with asparagus.
Saute in 1 Tablespoon of olive oil until asparagus goes soft.
Set aside, and keep warm.
Cut boneless, skinless chicken breasts. In a deep skillet combine diced chicken chunks, chicken broth, 1 Tablespoon olive oil, lemon juice, and lemon pepper.
Cook until the chicken is cooked all the way through and there is no pink, and the juices are almost all absorbed.
Add the vegetables into the pan with the chicken.
Cook until the chicken is a golden brown, and everything is heated through.
Add a dash of pepper and Enjoy!
