When it comes to a cold night or just a long day when I want something that feels like a hug, it doesn’t get better than this soup recipe. It takes almost no time to make and the flavor is so good, you will think that it has simmered all day.

When you make this lasagna soup, you are making a delicious filling soup that has all of the things you love about lasagna in a comfort style soup. This soup is filled with lasagna noodles with ground beef and Italian sausage.

Can I Cook the Pasta in the Soup?

I like to cook the noodles according to the box. I make sure my noodles are cooked to perfection. Not too hard and definitely not soggy. I have heard of other people cooking the noodles in the soup. If you choose to do this, you do not want to let the noodles simmer for too long. Also, add about an extra cup of broth or water to the soup. This is because the noodles will soak up and absorb some of the liquid.

What if I Don’t Have All the Herbs

I am not using too many extra herbs in this recipe because I want to make sure it is something that is easy for anyone to make. If you find that you are missing some of the seasonings, you can also use an Italian Seasoning. Use about 1 tablespoon to equal the seasoning that I have used.

How to Reheat Lasagna Soup

This soup is extremely easy to reheat. You can reheat this soup in the microwave or on the stove top.

I like to reheat the soup and then add the cooked pasta in after the soup is heated and then heat for a few more minutes until the pasta is heated through.

If you have added the pasta to the soup already, you might find that you need to add a little more broth as you heat the soup.

  • Olive oil
  • Hot Italian sausage
  • Ground beef
  • Onion, garlic
  • Oregano, basil

  • Crushed tomatoes
  • Diced tomatoes
  • Tomato paste

  • Chicken broth
  • Heavy cream

How to Make Lasagna Soup

Step 1: Prep

Cook lasagna noodles according to package directions. Drain, rinse, and set aside.

Step 2: Making the Soup

Heat olive oil in a large Dutch oven over medium heat. Add sausage, ground beef, and onions and cook until meat is no longer pink and onions are translucent. Drain grease and return back to pot. Sprinkle oregano, basil, salt, pepper, fennel seeds, Cajun seasoning, red pepper flakes, and garlic over meat. Stir and cook for an additional 3 minutes. Add tomato pasta and water and stir to combine.

Pour chicken broth, crushed tomatoes, diced tomatoes, and heavy cream into pot and stir. Bring to a slight boil, reduce heat, cover, and cook for 20 minutes.

Mix ricotta cheese, parmesan cheese, and mozzarella cheese together in a separate mixing bowl and set aside.

Step 3: Assembling the Soup

Break noodles into bite sized pieces and add to individual bowls. Spoon soup over noodles and top with cheese mixture. Serve with a side salad and garlic bread.
