This post today is not just about these Candied Pecans and Caramel Mini Cakes, this blog post is extra special because today a group of fellow food blogger friends is throwing a VIRTUAL BABY SHOWER for my food blogger friend, Jocelyn Delk Adams, of GRAND BABYCAKES!!!!

“Can I get a WHOOP-WHOOP?!!!!”

I never heard of a virtual baby shower until I stumbled across a series of sprinkle related blog post for food blogger Sally of “Sally’s Baking Addiction”. I clicked on everyone’s blog post who participated and thought how cool of an idea that was and super nice! I loved the idea the idea so much I knew I had to put one together. Luckily, I had the perfect person in mind and that was my dear food blogger friend Jocelyn. I scrolled through her blog post to see who frequented her blog post and reached out to those food bloggers to throw this virtual baby shower you are now a part of. Luckily, I didn’t have to do much convincing because most of the food bloggers I reached out to was elated to be apart of this celebration! They must’ve had friendly interactions with Jocelyn and feel in love with positive, ambitious, and happy aura just like I have. I must admit, I was smitten when I was first approached by Jocelyn a few year back. If anyone deserves this celebration and notoriety it is definitely her.

Okay, enough of the cheesy stuff, let’s get this virtual baby shower on the road.

When putting this shower together, I wanted it to include not just tasty cakes that were in the thought of Jocelyn’s blog, Grand Baby Cakes, but I wanted to add some common rituals that you typically see at a baby shower. Therefore, everyone who is participating in this shower is not only sharing a delicious mini cake recipe that fits their niche, but we are also sharing with Jocelyn some advice on being a new mom and a gift that we recommend for her to put her registry or purchase herself, seeing how we can’t physically give her a gift.

I must admit, it took me some time to figure out what mini cake recipe to create. I wanted to create a mini cake recipe that I would actually make if I were throwing Jocelyn an actually baby shower or something I would take along to other baby showers or parties. Honestly, I think I was thinking too hard. The first thing I thought was if I were going to throw a baby shower or take something to a baby shower, I would want to make something as easy as possible. Let’s face it although making a cake from scratch isn’t the most difficult thing to make, it most certainly can feel that way when you are making the cake.

So I decided to take a box cake mix to cut a lot out a lot of steps and time, but add my own flare to the cakes. In fact, I just posted a recipe round up for Easy Dessert Recipes using Cake Mix last week that you can refer to if you are looking for something similar. I have tried a few of Jocelyn’s recipes myself and the one recipe of hers that I have made twice and absolutely-positively-love are the “Real Deal Caramel Cake”. You have got to try the recipe if you are looking for a caramel cake recipe. My Candied Pecan and Caramel Mini Cakes are like a distant cousin to her caramel cake recipe. Mommy advice: There is so much I can share with you because I just had my baby last year (thanks for all the “likes” on Facebook btw) so I am filled with a ton of learning experiences, trials, and tribulations that I can share with you. If you ever need some advice, do not hesitate to reach out to me about anything. However, for this post, I will actually share some advice and a resource that I highly recommend.

The resource I recommend is taking the online class “Will I Ever Sleep Again?” by Taking Cara Babies. Cara is a Nurse Practitioners whose specialty is helping babies sleep through the night. Her entire career is based on helping parents establish a schedule that is conducive to their lifestyle and to help your baby sleep through the night. I HIGHLY, HIGHLY, recommend the class. My husband and I were lost before we took her class. We thought we had it under control and accepted that our baby was just a baby and it’s natural for us to lose sleep. But that is so not true. Don’t get me wrong, you guys will have some sleepless nights for sure, but Cara teaches you guys a way where you don’t have to. By you working on your second book along with other opportunities you are working on, you need your rest momma. So take her class. My son didn’t sleep through the night for a while, but her recommendations made a HUGE difference in how he slept. He was sleeping 2-3 hours a time and with her recommendation, he started sleeping 5-6 hours at a time! We kind of started her schedule a little late (right when he was on the brink of the four-month regression) but if we started when we first brought him home I am sure it would’ve made a huge difference.

My advice is to take your time. Stop blogging. Do as much blog work as you can right now so when your baby comes home you can just be a mom. Create the infrastructure you need right now, that will support your time off. You don’t want to miss precious moments of your baby’s first few months of life. They are the most precious and important to establish a strong bond. I remember last year, I think it was a week or two before my son was born and my feet were swollen, my back was hurting, and I was exhausted I hauled ass and made as many recipes as I could and scheduled as many as I could before I gave birth. I had my best friend plan my social media post through Hootsuite and I did the best I could with everything I had going on at the time. Get this, I even brought my laptop with me to the hospital thinking I was going to get some work done. HA! Girl, I was tired as hell. At best, I checked my email and that was about it. I was idle for about 3 weeks ( I think) after I had my kid. I republished some older blog post to keep things current but I didn’t start baking new stuff for about a month. The point is, don’t feel pressured to make new content, be on Pinterest, make new recipe videos, and blah blah blah. Trust what you have put out in the world and that God will sustain the business you created until you FEEL LIKE getting back on your feet.

Gift idea: Oh my goodness, GIIIIIIRRRRRRLLLL, there are so many products that I can suggest to you that I don’t even know where to begin. You are always on the go and you are going to need something for your baby to sleep comfortably while you are handling your business and something she can grow into. I love our pack and play and can’t imagine life without it. As a matter of fact, right now as I am typing this blog post, my kid is right next to me playing peacefully in his pack and play. Otherwise, I wouldn’t get anything done because I would be chasing him around here. So, make sure you get a good pack and play that you can travel with comfort.

I can’t imagine that was something easy to share as it is extremely private, but kudos to you for your courage and willingness to provide comfort to others who may be going through the same journey.

Description

This Candied Pecan and Caramel Mini Cakes recipe are delicious and easy to make. Topped with an easy caramel glaze and buttery moist yellow cake.

Ingredients

Scale

  • 1 Yellow Cake Mix box
  • 3 eggs
  • 2 tbsp. Brown sugar
  • 2 tbsp. Butter
  • 1 tsp. Vanilla extract
  • ½ c. water
  • c. oil
  • Dollop of sour cream
  • ½ c. pecan pieces
  • Glaze
  • 4 tbsp. Butter
  • ½ c. light brown sugar, packed
  • c. heavy cream
  • 1 c. powdered sugar, sifted
  • Pinch of salt

Instructions

  1. Preheat oven to 350 Degrees. Spray Mini Bundt Cake pans with baking spray and set aside.
  2. In a large bowl, add the cake mix, eggs, brown sugar, butter, vanilla extract, water, vegetable oil, and mix until well combined. Add a dollop of sour cream and pecans and stir once more to blend well.
  3. Fill each bundt cake with 2/3rds of cake mix and bake on middle rack for 20 minutes. Allow to cool for 5 minutes and turn to cooling rack.
  4. To make the glaze:
  5. In a medium saucepan, melt the butter and add the brown sugar on medium heat. Whisk to combine and allow to come to a slight boil for 5 minutes. Slowly pour in the heavy cream and whisk until well mixed. Remove from heat and allow to cool for 5 minutes.
  6. Next, add the powdered sugar and whisk until well combined and add the pinch of salt.
